Pages are copied as they are, never redrawn, so text stays text and pictures keep their quality. Bookmarks are rebuilt, one per file with its own inside, and form fields with the same name in two files are renamed so both keep their answers.
Edit text is for short changes, a name, a date, an amount, a sentence. It covers the old line and writes the new one in the closest font; it can’t reflow a paragraph.
White-out covers what is under it, so the text is still there for anyone who copies it. Remove for real turns that page into a picture, and the hidden text is gone.
Old Adobe-only forms (XFA) can’t be filled here. A signed PDF loses its signature as soon as anything changes. A PDF with a password opens with it, and what you save is a copy without the password.
